Recipe: Easy Coconut Cream Berry Mousse

This mousse recipe is simple, easy, and a reasonable treat option for those who love coconut, don't do dairy, are keto or Paleo. I was looking for something sweet that wouldn't kill my gut or blood sugar.

-Blend 1 cup berries with sweetener and vanilla. I used 2T monk fruit plus generous splash of vanilla but you can modify these based on preference.

-Whip cold coconut cream with mixer until creamy. I used my trust hand mixer but I'm sure the fancy stand mixer would work.

-Fold together.

-Put in cute jars and enjoy! If you don't eat it all straight out of mixing bowl.

You can refrigerate a bit to set. You can layer this with berries, nuts, granola, chocolate, to get fancy. This took me maybe 1 minute to make. I used canned coconut cream and frozen berries (thawed and blended) from Trader Joe’s.
